Instructions
Cut the custard apples in half and scoop out all the creamy white flesh into a bowl using a spoon. Discard the skin and stem.
Pick through the flesh carefully and remove all the black seeds. This step takes a few minutes but is important for a smooth drinking experience.
Add the seedless custard apple flesh to a blender jar. Pour in the cold milk.
Add cardamom powder and sweetener if using. Start with less sweetener as you can always add more later.
Blend on medium speed for 30 to 40 seconds until the mixture is smooth and creamy. Do not overblend or it will become too frothy.
Taste and adjust sweetness if needed. If the smoothie is too thick, add a splash more milk and blend briefly.
If you want an extra smooth texture, pour the smoothie through a fine mesh sieve into serving glasses. This step is optional.
Add ice cubes to the glasses if you want it extra cold, then pour the smoothie over.
Serve immediately with a straw or spoon. Garnish with a light sprinkle of cardamom powder on top if you like.
Notes
Always use ripe custard apples for best sweetness and flavor. Unripe ones will taste bland.
If you cannot find custard apples, this recipe will not work with substitutes. Sitaphal has a very unique taste.
For a thicker smoothie bowl consistency, reduce milk to 1 cup and eat with a spoon. Top with chopped nuts or granola.
The smoothie is best consumed fresh. It can be stored in the fridge for 3 to 4 hours but may separate and change color slightly.
Use a high speed blender for smoothest results. A regular mixer will also work but strain afterward.
You can freeze custard apple pulp (without seeds) in ice cube trays and use later for smoothies.
Avoid adding banana unless you like that flavor, as it can overpower the delicate sitaphal taste.
